Quick and Easy Raw Red Beet Salad Recipe


Ingredients

  • 3 large beets

  • 1 large shallot or red onion

  • 1/2 cup balsamic vinegar

  • 1 tablespoon Dijon mustard, or more, to taste

  • Freshly ground black pepper, to taste

  • Minced parsley, chives, spring onion, or dill (optional)


Instructions

  1. Peel the beets and the onion.

  2. Grate the beets by hand and mince the onion, then combine. Alternatively, use a food processor fitted with a metal blade, pulse the beets and onion until shredded (do not puree).

  3. Transfer the shredded mixture to a bowl.

  4. Mix in the balsamic vinegar, Dijon mustard, and freshly ground black pepper. Taste and adjust the seasoning as needed.

  5. If desired, add minced herbs before serving.
