Do you miss your old Mac and Cheese sauce? I get it. Here is a much better version of it that you can actually feel good about!
Many people who (very wisely) decide to stop eating dairy still miss cheese and find it very hard to quit. Some even say that they are addicted to it. Well, they might be right and here is why.
Casein, one of the proteins contained in cheese, is broken by the body into casomorphins. Casomorphins are opiate-like compounds that attach to dopamine receptors in your brain. Once there, the brain releases dopamine, the feel-good chemical that might trigger your cheese cravings just like addictive drugs.
But don't give up hope just yet! If you stay away from cheese long enough, your cravings will subside. And once you try this recipe, the transition might be much easier.
No Nut Mac & Cheese Sauce
Ingredients
2 cups potatoes, diced, cooked
1 cup carrots (or sweet potatoes), diced, cooked
1/2 cup water (or the water from cooking the veggies)
1/3 cup plant milk, unsweetened
1 Tbsp lemon juice, freshly squeezed
1/2 cup nutritional yeast
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp salt, or more to taste
dash of cayenne (optional)
Directions
Cook the carrots and potatoes together. Strain the cooking water but keep 1/2 cup.
Blend all ingredients in a high-powered blender until smooth and creamy.
Store in the refrigerator for up to a week.
How to use it:
Add to pasta to make Mac and “Cheese”
Mix with brown rice, add beans, corn, salsa and spinach or other greens...
Pour over steamed veggies
Eat with tortilla chips or baked pita wedges
Serve as a dip for raw or lightly steamed veggies
