Who needs candy when you can have sweet potato!

Sweet potatoes and dark leafy greens are the most nutrient dense plants on the planet. Yo can read more about these nature's miracles here.


Although I'd be a little hesitant about making a kale parfait (hey, never say never, right?) but I can promise you that if you can get hold of Hannah sweet potatoes and make this recipe, you won't be sorry. In fact, I think that these potatoes are a little bit addictive so if you get hooked, sorry. ;o)

Hannah Sweet Potato Yogurt Parfait

Ingredients

  • 3 cups Hannah (yellow) sweet potatoes, microwaved, skins removed

  • 1 cup unsweetened non-dairy milk, or more as needed

  • 3 cups unsweetened plain non-dairy yogurt

  • 2 cups fresh or frozen fruit (raspberries, blueberries, sliced bananas, apricots, pomegranate seeds…)


Instructions

  1. Place cooked sweet potatoes in a high-speed blender such as Vitamix. If all you have is a small blender, half the recipe or process in batches.

  2. To the potatoes, add the milk and process until completely smooth.

  3. Don’t worry if the mixture seems too thin, it will thicken as it cools.

  4. Get your jars or glasses, yogurt and fruit ready.

  5. Assemble your parfaits by layering the potato mixture, yogurt and fruit into jars in any order you wish.

  6. Serve immediately or chill in the fridge.
