Ginger-Lime Spritzer
Ingredients
For Ginger-Lime juice:
1 pound fresh ginger, roughly cut
3 cups water
1/2 cup lime juice, freshly squeezed
Stevia, Sucanat or maple syrup, to taste (optional)
To Serve:
1/2 cup Ginger-Lime Juice
Water or seltzer water, as little or as much as desired
Fresh mint leaves for decoration (optional)
Lime, lemon or orange wedges for decoration (optional)
Instructions
For Ginger-Lime juice:
Blend the ginger, water, and lime juice in a high-speed blender until smooth, set aside.
Place a cheese-cloth over a 4-cup measuring cup, set aside.
Pour the mixture from the blender into the cheesecloth and separate the juice from the pulp by gently squeezing the juice out.
Once all juice is squeezed out, discard (compost) the pulp.
To the juice, add sweetener of your choice to adjust to your taste.
Place the Ginger-Lime Juice in the fridge or serve immediately as described below.
To Serve:
Pour 1/2 cup of Ginger-Lime Juice into a glass and add enough water or seltzer water as you like.
Decorate with a sprig of mint, and/or citrus slices, if you wish.
Tip 1: Freeze leftover Ginger-Lime Juice in ice cube trays. Once frozen, you can transfer ice cubes in Ziploc bags and store in the freezer for future use. Tip 2: You can use lemon or orange juice instead of the lime juice, or any mixture of these.
